The perfect runner’s breakfast burrito

BurritoI tend to go through phases of what I crave, and when I’m in a phase I don’t stray from it for quite sometime. For months, I went through a tahini, honey and banana on toast phase. Every morning would I wake up excited to eat it my toast concoction. Lately, I’ve been all about the classic breakfast burrito. In this case it should be named the lunch burrito as it hasn’t replaced my morning toast routine.

The burrito returned to my life a week or so ago when the grind of peak mileage and midterms was setting in. I needed food quickly, filled with essential nutrients, and easy enough to eat while having mental breakdowns.

Enter the burrito.

Warm corn tortillas filled with scrambled eggs, cheddar cheese, avocado, salsa and hot sauce where the answers to my calling. In less than 10 minutes, I could stray from my studies, or whip it up right after my runs and have a load of delicious food safe from spillage all wrapped up in a warm tortilla. To add to the pressures of exams, when I discovered all of my tortillas had split in two, I was not amused. Unwilling to give up on my new obsession, the wraps turned into more of a taco shaped wrap, hence the ridiculous looking “wraps” in the pictures. But it works.

The no-fuss, 10-minute Burrito

Ingredients

tortilla (corn or flour; big or small, whatever your preference is)
scrambled eggs
sliced avocado
sliced old cheddar cheese
salsa
hot sauce (especially if your salsa isn’t spicy enough)
salt and pepper to taste

Directions

Slice the avocado and cheese into strips, set aside.

Whisk the eggs together with a little bit of milk and pour into a pan set at med heat.

Scramble the eggs and place on plate once finished cooking.

Using the same pan place the tortilla/s in to warm up. About 15-20 seconds each side should do it.

Once the tortilla is flipped to the second side, add the sliced of cheese and place the eggs on top to melt the cheese thoroughly.

Remove the tortilla from the pan and add the avocado, salsa and hot sauce.

Wrap it all up in whatever style suits you and enjoy!
