The snack: Gourmet toast for post run

What do you mean what is gourmet toast? It’s really fancy toast with tons of toppings.

Life doesn’t have to be 12 grain boringness all the time. Bust out that toaster you haven’t been using and add a little zazz to your life. So if plain toast and honey is making you sad or raspberry spreads just aren’t your *jam*, try these options instead. Just make sure you’re using a bread that’s fresh and doesn’t contain refined wheats. 

Free yourself from PB & J hegemony. Here are some great topping combinations to help you get your gourmet toast phase started.

1. Blue cheese and praline pecan toast 

Ingredients

Blue cheese (desired amount for one or two slices of toast)

1/4 cup praline pecans

Spread the desired amount of blue cheese onto the toast. Sprinkle with praline pecans and you’ve got yourself the best post-run snack that has ever happened.

2. Strawberries and goat cheese on toast

Spread desired amount of goat cheese on toast. Add chopped strawberries. If you’re feeling crazy, go for an herb goat cheese for a twist in flavour. For an ever crazier option, use beets instead of strawberries. Beets contain nitric oxide which help make muscle contractions more efficient. You need more than just one helping on toast to do that but adding them to your diet is a good idea.

3. Lasagna toast 

3 tbspn Ricotta cheese

Grated mozzarella or cheddar (just a sprinkling)

1 tbspn olive oil

Spinach (as much as desired)

1/4 cup zucchini

1/2 tsp garlic

Tomato slices

Basil leaves

Preheat the over to 450. Toast the bread. Spread on the ricotta cheese. The amount of toppings you wish to pile on is totally up to you. Gourmet toast isn’t science. Use the ricotta as your base layer and pile the veggies on. Sprinkle with cheddar or mozzarella and drizzle with olive oil. Put the toast slices on a baking sheet and bake for six to eight minutes until the cheese is melted or slightly golden.

4. Cream cheese with fruits on toast

Cream cheese

Apricot

1 banana

Strawberries sliced

Peanuts

Spread the cream cheese on toast. Add banana slices. Pile on apricots and strawberry slices. Grind peanuts and sprinkle on top. Voila: gourmet fruit toast.
