Parrot-Migas debuted the half-marathon last fall in 1:05:46, then went on to lower his PB by almost two minutes at last weekend’s Houston Marathon. He has been vegan for the past year and vegetarian for almost 3 years prior. With his performances improving steadily in that time, there’s no denying the power of going plant-based!
