The snack: Healthy rice krispie treats

A rice krispie square is a classic childhood favourite. However, gelatin, corn-based syrup and funky additives to increase shelf life mean many healthy-minded runners might not be reaching for this snack.

We’ve rounded up the best recipes that have reworked this traditional snack to make it healthier and definitely post-run appropriate.

These squares are made with brown rice krispies and dried apricots, cranberries, raisins and sunflower seeds (though you can get creative with your mix-ins), making for a ‘healthified’ version of the childhood classic. Perfect for packing along when hiking the trail.

2) Homemade protein bars

Chia and hemp super seeds provide vegan friendly protein, omega 3s and fibre to these moist squares.

We’re a big fan of “Running With Spoons” not only because the author is Canadian (based out of Edmonton, Alta.) but because she is a graduate from the Institute of Integrative Nutrition, works as a health coach and previously suffered from an eating disorder, a fact which now shapes her desire to help people eat healthfully, but without anxiety. Plus, the recipes are delicious.

These squares are no-bake, gluten-free, dairy-free and soy-free. They are not, however, flavour-free. Definitely not. This recipe’s author says she took your classic rice krispie recipe, but then reworked it with “a little less spun corn syrup fakery and little more genuine yummiosity.”

5) Apricot and goji sqaures

These squares are actually made with puffed millet, which is a slightly nuttier and higher protein puffed cereal. These treats are vegan friendly and take 10 minutes to make.

6) Peanut butter krispie treats

These definitely don’t look like your traditional rice krispie treat. In fact,

7) Healthy rice krispie treats

Unsweetened coconut, dried blueberries, chia seeds and chopped almonds are just a few of the healthy-but-decadent ingredients that go into this yummy recipe. The author also includes instructions for a dark chocolate glaze, which can take these from snack to dessert.

8) Cashew butter krispie treats

9) Cinnamon raisin krispie treats
With protein powder included in the recipe, these bars taste like a homemade Luna Bar. They’re vegan and gluten-free.

10) Healthy chocolate cherry almond krispie treats

chocolate cherryThese treats are made with dark chocolate, dried tart cherries, almonds and sea salt. If that isn’t divine enough, one serving comes in at only 68 calories. High in antioxidants and low in sugar, you’d be hard pressed to find a better dessert option.
