The runner’s dinner: Sweet potato noodles with veggies and avocado

It has come to the attention of my sister and I that we share a brain. It actually seems as though we can communicate telepathically and all too often, when one of us says or does something, the other one will respond with, “I was just about to send/say/do that!” It’s freaky how often this happens.

It helps that we have practically identical Pinterest boards and share every good thing we find. Awhile ago, my sister made sweet potato noodles with sautéed veggies and turkey sausage. As per usual, she sent me a picture of it to gloat about winning our “dinner of the day” feud. It looked amazing and I wanted to make it too. At the time, I didn’t have the ingredients so that meal plan went on the back burner.

Finally though, I brought out my spiralizer and make sweet potato noodles, veggies and turkey sausage. I may have used different ingredients and spices than she did, but I sent her a picture without a caption as soon as it was done. Without missing a beat she replies, “Sweet potato noodles with turkey sausage!” along with the heart-eyed emoji. It was perfect.

Making sweet potato noodles is incredibly simple: all you need is a spiralizer. I have a really basic one. All you do is peel the potato, and spin it through. There are fancier spriralizers out there that probably require less work, but why deny yourself a good extra upper body workout? Just make sure that you buy long and thin potatoes – the really wide ones don’t fit!

Sweet potato noodles with sausage and veggies

Serves 2-3

INGREDIENTS:

– 2 medium sweet potatoes or yams, preferably long and thin, peeled

– 1 bell pepper, chopped

– 1 cup snap peas, chopped

– 2 cups kale, torn

– 2 medium carrots, julienned

– 1 tbsp sun-dried tomato pesto

– 1 tsp oil

– 2 tsp garlic, minced

– 250g turkey sausage, sliced

– 1 avocado

– salt and pepper to taste

Directions:

1. Spiralize the sweet potatoes and set aside.

2. Heat a large skillet on medium-high heat and add garlic, oil and turkey sausage.

3. Once the sausage is thoroughly cooked, add the pepper, snap peas, spiralized potatoes, carrots and pesto.

4. Lower to medium heat and cover. Stir frequently to prevent sticking.

5. Cook until the noodles become softened but still hold their shape. Be careful not to cook for too long otherwise they just turn into mashed potatoes.

6. Serve garnished with diced avocado.
