Roasted Broccoli with pine nuts

Sick of spending hours in the kitchen? Dinners and lunches don’t have to be a complicated ordeal. Sometimes after a long week though it really feels like putting together a healthy and filling meal is just too much effort. Luckily you can take the effort down a couple notches and still have something satisfying and good for you on the dinner plate. We’ve rounded up a few suggestions. Get cooking!

One pan balsamic chicken and veggies: Runners need their protein and chicken is always a good meat to reach for to replenish those muscles after a hard effort day. This one has very minimal work for a such a nutrient-loaded meal and afterwards, there’s only one pan and your chopping board to wash up!

Vegetarian power salad: This recipe is nice and light but incredibly flavourful. Have extra vegetables in the crisper? Throw them in!

Crunchy Thai salad: It only takes ten minutes to throw this one together. With the ginger and lime flavours, this one has an incredibly sharp taste. Since it’s all healthy ingredients, eat as much as you want. 

Garlic mushroom quinoa: We love quinoa but if the recipe is off, it can taste a bit bland. That’s not the case with this recipe though. The mushroom and garlic make it extra yummy. This is a quick side dish but could also be eaten as a lunch in the office. Vary up the Italian seasoning and use as much as you like.

Roasted Parmesan lemon broccoli: Roasted broccoli is so easy to make. All you have to do with this one is shake a little lemon juice and Parmesan cheese on top and stick it in the oven. Served with a chicken breast or fish fillet, this makes an excellent dinner.

Vegetable steak rolls: Low iron levels is something that many runners have to watch for. When iron dips, so does energy and that doesn’t make for very effective running. Steak is a very iron-rich meat and luckily, it doesn’t always have to be a time consuming and fancy meal. Wrap your favourite veggies in thin strips of meat, cook to your liking and voila, dinner is served!

Italian tomato spinach soup: This soup will only take about 20 minutes to put together and most of that cook time you just have to leave it to simmer. That’s the best kind of cooking on busy days.
