Creative (and healthy) ways to cook your root vegetables this fall

Isn’t fall one of the best times for cooking? When the air cools, we finally want a change from all those summer salads. It’s time again for hot soups, chunky stews, and of course, root vegetables. Root vegetables can be done in many ways– have them for breakfast, a light lunch or dinner. They are in season and who doesn’t want to be eating in-season produce? Here are some ideas for your next creative day in the kitchen!

Root vegetable hash

Root vegetables for breakfast? Yes please. This recipe is incredibly easy and will give you something to look forward to when you wake up in the morning.

Sweet potato waffles

Enjoy these after a long run as a healthy and delicious reward. This is definitely an interesting twist to your regular waffle. Runners will be happy to give the traditional sugar-laden breakfast option a rest while still putting the waffle iron to good use.

Roast chicken with root vegetables

A solid dinner option and simple enough to whip up after work. The best part about this one is that it can double up as the next day’s lunch.

Roasted root salad

When your standard salad is getting a little boring, opt for this one instead. This recipe keeps things interesting while still being a light lunch option.

Maple balsamic roasted root vegetables

The maple and balsamic flavours of this recipe compliment the root vegetables nicely. This one is sure to become a favourite side dish all fall.

Chunky root vegetable soup
