Seasonal snacking: Healthy recipes for green peas
One of my favourite summertime activities as a kid was when my mother would let me shell the fresh green peas that she would buy from the farmer’s market. Each of these green pea recipes honours the classic warm-weather vegetable.
1) Sweet peas with prosciutto
An interesting combination of salty and sweet, this recipe is great as a side dish or for a healthy seasonal packed lunch.
2) Fresh pea and corn salad
Adding protein like grilled chicken or lentils to this vegetable medley would turn into a healthy main.
3) Spring panzanella with peas
Panzanella is the perfect solution for bread that is starting to go stale. This recipe also incorporates fresh springtime herbs for the full seasonal experience.
4) Peas, potatoes and mint
Sugar snap and green peas make for a much dressier version of the potato side dish.

Never did I ever imagine peas on the BBQ, but, when I think about it, the idea is brilliant! From this list, this is the recipe I’m most excited about trying. Nothing says warm weather like barbecuing!

With toasted pumpkin seeds for crunch and pitted dates and green peas for sweetness, this springtime is to die for.
