Seasonal snacking: Must-try zucchini recipes

Into zucchini? Who isn’t? This staple in summer gardens is one of the most versatile vegetables there is. Create a new favourite snack, bake a breakfast muffin or learn a new side dish to add to the menu. No matter what you’re looking to do in the kitchen, you can nearly always add zucchini. So get some fresh from the garden and try one of these recipes:

Zucchini-Bread-11) Healthy zucchini bread

Love banana bread? Then zucchini bread is your perfect seasonal recipe to try. This loaf is moist and tasty, but each slice is only 100 calories. It is also easily adaptable to become gluten-free and vegan.

2) Zucchini bites

The author of this recipe calls it the healthy version of a tater tot. These are perfect as a side dish, or even as a savoury breakfast option.

3) Zucchini, carrot and apple muffins

With three cups of grated carrots, two cups of grated zucchini and two granny smith apples within the recipe, these certainly aren’t muffins that you need to feel guilty about indulging in. Choose between adding in walnut pieces for crunch, or raisins for sweetness (or do both, we won’t judge).

Out of all the mouth-watering zucchini recipes that I’ve been perusing, I think this is the one I’m most excited to try, it looks so delicious! The ingredient list is made up of items that you’re likely to already have and the bake time is only 30 minutes. Flourless means that it is safe for anyone that cannot tolerate gluten as well.

5) Chocolate zucchini oatmeal muffins

If you’re the type of person that needs a daily chocolate fix, then look no farther! These muffins are deceptively healthy, but when eaten with a smear of peanut butter on top, like the author of the recipe suggests, they seem like quite a treat.

This recipe puts a neat spin on traditional pizza, baking zucchini right into the base. It is easily adaptable to be gluten-free and makes for the perfect summer night supper.

7) Lemon parmeson zucchini

Ready in just 15 minutes, this simple side will be sure to wow dinner guests.

8) Cream of zucchini soup

With only five ingredients in total, this recipe is perfect even for the inexperienced soup-maker. At 60 calories per serving, it makes for a great healthy and light side dish.

The ‘healthified’ version of the potato chip flavour that no one can resist.

10) Zucchini pizza boats

Love pizza but watching your waistline? This recipe is the perfect alternative (that lets you eat multiple ‘slices’). Plus, it’s totally kid-friendly.
